Had to share Wida from Cupcake Richard's Cherry Chocolate Brownie Cake recipe. Cherries remind me of Christmas. My granny always made us have Christmas cake, which I hated and still don't like to this day, but I ate it, so I could get the charms. Then when we got the charms, we had to give it back to her for the following years cake, hahaha! I don't think I will have a problem eating Wida's cake though, as it contains fresh cherries and is super chocolatey! Yummy!

21 Days of gratitude recipe: Cherry Chocolate Brownie Cake

Here's her recipe:

Prep time: 25 mins | Cook time: 20 mins | Total time: 45 mins

Ingredients
  1. ¾ cup gluten free flour
  2. 1 cup powdered sugar
  3. ⅓ cup raw cocoa
  4. ¼ tsp baking powder
  5. ¼ tsp salt
  6. ⅓ cup canola oil
  7. 1 tbsp vanilla extract
  8. 1 flax egg {1tbsp ground flax + 3 tbsp water}
  9. 120ml warm water
  10. 120g fresh stoned cherries {whole or halved}
Instructions
  1. Grease a 20cm round pie/tart pan
  2. Preheat oven to 160 ºC
  3. Sift and mix flour, sugar, cocoa, salt & baking powder together
  4. Add oil, flax, vanilla and water
  5. Mix until completely combined
  6. Pour batter into greased pan
  7. Place cherries on top of batter as desired
  8. Bake for 20 to 25 minutes
Notes
  1. Should be firm but still slightly moist in the centre
  2. Dust with powdered sugar
