Grilled Cheese Toasts {Braai Broodjies} · with a bit of heat · Recipe

Braai Broodjies Recipe for Heritage Day

For Heritage Day we decided to collaborate with the lovely Wida from Cupcake Richard. I must confess that I have always had a crush on her Instagram feed and really wanted to work with her. We decided to use our limited edition black Table Mountain platter and pair it with a braai broodjie recipe in celebration of Braai Day. Wida styled and photographed all these beautiful pictures.

For my birthday this year, we had a braai broodjie competition where I split my friends into groups of four and they had to make their own recipe of a braai broodjie which was tasted and scored by a group of judges. Charl's recipe won, which I gave to Wida to make. She had to adjust it to a vegan recipe, as she is a vegan, but you can use any cheese or even a mixture of cheeses. The jalapeños are optional, if they are too hot too handle, leave them out.

Braai Broodjies Recipe for Heritage Day

Braai broodjies with a Mexican Twist

Serves: 6    |    Prep Time : 15 minutes    |    Cook Time : 10 minutes

Ingredients:

1 ciabatta loaf

30ml olive oil / vegan margarine

6 - 8 slices dairy free vegan cheese

10 small rosa tomatoes finely chopped

1 small red onion finely chopped

½ - 1 pickled / smoked jalapeño pepper finely chopped

¼ tsp garlic flakes / 1/2 tsp crushed fresh garlic

⅛ tsp ground coriander

⅛ tsp paprika

⅛ ground cumin

salt and pepper to taste

Instructions:

Cut the ciabatta into 12 medium thick slices

Brush with olive oil on both sides of each slice

Place 1 slice of cheese on one half of the bread slices

Combine all the other ingredients in a medium sized bowl

Evenly divide mixture and spoon on top of cheese topped bread slices 

Top the slices with filling with plain slice of bread to make a sandwich

Tie each sandwich with a piece of twine to secure

Place sandwiches on grid for open fire cooking
Grill (braai) over medium hot coals for 5 minutes each side or until golden and cheese is melted

Notes: Serve with fresh coriander and extra jalapeños
